  1. Preheat oven to 200 degrees C. Pat the chickpeas dry with paper towels and season with olive oil, paprika, cumin, salt and pepper. Arrange the chickpeas in layers on a baking tray and place in the oven for 30-40 minutes, stirring or stirring occasionally to prevent the beans from overcooking. Crispy-baked chickpeas will be golden brown.

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1/2 cup non-dairy butter
  • 1 cup granulated sugar
  • 1 tablespoon orange peel
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon orange extract
  • 2 tablespoons chickpea flour
  • 1/4 cup + 2 tablespoons water

Making

  1. Sift flour, baking powder, baking soda and salt into a small bowl. Set aside.
  2. Using a stand mixer, beat butter and sugar until light and fluffy. Add orange peel and orange extract beat to combine.
  3. Stir in chickpea flour and water until creamy and thick. You can use a small grinder or a coffee grinder. Slowly add the chickpea mixture to the butter-sugar mixture and beat until all are combined.
  4. Add flour mixture and continue beating. Add cocoa nibs and hazelnuts, mix well.
  5. Cover and refrigerate for at least 1 hour.
  6. Preheat oven to 170 degrees C. Divide dough in half, roll into pieces on a flat surface sprinkled with flour. Transfer to a baking tray lined with parchment paper and flatten the dough to about 2.5cm. Bake for 30 minutes or until lightly golden brown.
  7. Remove the cake from the oven and let it cool for 15 minutes before slicing each piece into 10 cakes. Place on baking tray and place in oven, bake for 15-20 minutes until golden brown.
  8. Let cool for 15 minutes. Store in a sealed container.

  • 1/2 tablespoon pure maple syrup

  • 1/8 teaspoon smoked paprika – optional
  • 1/4 cup raw pumpkin seeds
  • 1/4 cup raw almonds, or half a pecans
  • 1/3 cup dried cherries
  • 1/4 cup chocolate chips, black

Making

  1. Place the baking rack in the center of the oven and preheat the oven to 190 degrees Celsius. Line the baking sheet with baking paper. Place the chickpeas on two layers of paper towels and pat dry several times. Discard the peeled beans. Spread the chickpeas in layers on the prepared baking tray. Bake for 10 minutes. Don't add anything to the chickpeas.
  2. Remove chickpeas from the oven, drizzle with coconut oil and maple syrup. Sprinkle with cinnamon, salt, and smoked chicken pole peppers. Mix well, then place the chickpeas in the oven for another 10 minutes.
  3. Remove the tray from the oven again and shake gently to stir the chickpeas. Add the pumpkin seeds and almonds. Continue to bake until nuts are tender, chickpeas are golden brown and crisp, about 8-10 minutes more. Place tray on a rack to cool completely.
  4. When the chickpeas and nuts have cooled, place them in a bowl. Add the dried cherries and dark chocolate chips. Divide into portions and save for later use.

Note: This dish will keep for 1 week in an airtight container at room temperature. If you use a ziplock bag, the chickpeas will be soft but still delicious. Do not store in the refrigerator, the seeds will soften.
